Baby Vegetable Frittata Recipe

This is a quick and easy Veggie Frittata perfect for bubs breakfast, lunch or dinner.

INGREDIENTS


½ CHOPPED ONION
1 HANDFUL OF QUARTERED CHERRY TOMATOES
½ GRATED CARROT
1 HANDFUL OF GRATED CHEDDAR CHEESE
2 CHOPPED GARLIC CLOVES
1 HANDFUL OF ROUGHLY CHOPPED ZUCCHINI
4 EGGS
DASH OF SOY MILK (OR ANY TYPE OF MILK)
SESAME & CHIA SEEDS
FETTA FOR THE TOP

METHOD

  1. Chop up the onions, garlic, tomatoes, zucchini, and broccoli

  2. Grate carrot and cheddar cheese

  3. Crack 4 eggs into a large bowl and pour in a small amount of milk

  4. Add all ingredients into the bowl

  5. Mix up until all combined well

  6. Pour into a bread baking dish

  7. Sprinkle seeds and fetta over top

  8. Throw into oven and bake for 30-35mins or until golden

  9. Voilaaaaa serve it up to your little beast

  • These are nice and healthy, perfect for on the go. They can be eaten hot or cold. You can freeze them up as well. You can even mix and match whatever vegetables you want, just try to keep the ratios and volume around the same.
